fruit, nut, and seed mix


3/4 cup natural, unsweetened wide-flake coconut
1/3 cup raw cashews
1/3 cup dried apricot chunks
1/3 cup uncrystallized candied ginger chunks
1/3 cup dired mango chunks
1/4 cup dried tart (Montmorency) cherries
1/4 cup dried sweetened cranberries
1/4 cup raw sunflower seeds
1/4 cup raw pumpkin seeds
1/4 cup raw almonds


Combine the coconut, cashews, apricots, ginger, mangoes, cherries, and cranberries in a small mixing bowl. Add the sunflower seeds, pumpkin seeds, almonds, and combine.  Turn the mixture into a clean, dry, food-safe bag and twist-tie close.


one snacking bag, about two and one-half cups (amount depends on the size of the chunks of fruit and length of the coconut flakes)


up to one week in advance, stored in a twist-tied bag


unsweetened wide-flake coconut, rather than the sweetened flaked variety, is preferred in this mix for its texture and flavor
