Appleluscious is one way I’d describe my fresh apple cake. It’s appealingly moist and a cinch to make. Really.
The cake batter is made by hand and, as such, far from fussy. Ingredient alert!: Apart from the apples, it’s easily made with basic refrigerator and pantry ingredients that you’d have on hand. The peeled apples are cut into fairly substantial chunks amounting to 2 1/2 cups and, during baking, lodge in the lightly-leavened batter and create a kind of baked-in silkiness. The apples form a sort of mosaic pattern, all tender and dewy.
Have a slice of cake with coffee or tea. A pouf of whipped cream or cold dip of vanilla ice cream would also be nice, though not essential. While the confection could be characterized as an everyday cake, it’s far from mundane, and my newest sweet staple.
