Fresh peach slices. A spoonful of creamy ricotta cheese. A scattering of pistachios. A drizzle of honey. All on a toasted slice of multi-grain bread.

A slice of summer.

Naturally, the pristine quality of  ingredients counts, but what really delights is the sweet and juicy stone fruit smoothed out with the cheese and punctuated with nuts. The foil for the topping is an earthy base of grainy, seeded bread.

Now is the time to top-and-eat, for peach season is ripe–and ephemeral.
